Bright midday sunlight floods the harvested grain field in Dar es Salaam, turning the wet earth into a mirror of reflected sky. A massive water buffalo, its hide dark and slick with mud, stands firmly in the churned soil of the rice paddy. The animal’s broad horns curve outward against the intense white light, while deep furrows cut through the brown, saturated ground. Green shoots of young rice emerge in neat rows along the furrow edges, against the bare, muddy tracks.
