Mixing Dough in Nairobi
The flat noon light bleaches the color from a busy Nairobi roadside eatery, where a woman in a bright yellow shuka stands behind a counter cluttered with daily necessities. Her hands move with practiced speed, flipping a large metal whisk in a chipped enamel bowl to mix dough for mandazi. Beside the whisk, a stack of rusted muffin tins sits empty, waiting for the next batch, while a worn varnish on a wooden chair rung near the entrance catches the harsh glare. A garden hose coils loosely across the concrete floor, its green plastic stark against the dusty ground, leading toward a cluster of spice tins that add splashes of red and gold to the otherwise monochromatic workspace.
