Preparing Sourdough in Vancouver

Morning light spills through the large industrial windows of a Kitsilano bakery, casting sharp geometric shadows across a stainless steel prep table. A baker’s hands, dusted with flour, slide a tray of golden sourdough loaves into the oven, the heat warping the air slightly above the metal rack. On the counter nearby, a worn leather tool hook holds a heavy iron peel, its handle stained from years of use. Outside, the wet pavement of West 4th Avenue reflects the pale blue sky, while a cyclist in a bright yellow rain jacket pauses at the crosswalk, their breath visible in the crisp air.
