Working Dough in Nice
by Tommy Henry
A baker in a flour-dusted apron leans over a heavy wooden counter in a Nice patisserie, his hands working dough while scattered lemons rest near a stack of paperbacks. Overhead, industrial table fans spin lazily against the gray midday light, casting soft, diffuse shadows across the worn wood marked by years of knife cuts. A brass hand mirror reflects the ceiling’s fluorescent tubes, adding a glint of artificial brightness to the otherwise muted, overcast interior. Nearby, a copper kitchen utensil hangs from a hook, catching the faint ambient glow, while a set of measuring cups sits empty beside a corkscrew, hinting at the day’s preparations.
