Adjusting Pastries in Nice

Soft, diffused morning light washes over a corner boulangerie in Nice, where a baker in a flour-dusted apron pauses to wipe steam from a glass display case. Raincoats hang in a row near the entrance, their vibrant yellow and red hues reflecting off the wet pavement visible through the doorway. Inside, a wooden rolling pin rests beside a stack of cookbooks on a scarred counter, while a pegboard holds metal tongs and a bread knife, its blade catching a faint glint of the overcast sky. The baker’s hands, rough and quick, adjust a tray of croissants, the steam rising in gentle spirals that blur the edge of a rusted cabinet latch.
