A baker in a cramped, tiled workshop in Porto lifts a heavy wooden peel from a brick oven, the steam rising sharply against the winter midday light filtering through a high, grime-streaked window. His flour-dusted apron hangs loosely over his work clothes, against the smooth, sun-warmed stone wall of the adjacent building visible through the open door. On the counter, a small, rusted coffee grinder sits next to a stack of white flour sacks, while a faded doormat lies scuffed at the threshold, catching the dust kicked up by the morning rush.
