Cooking Mole in Mexico City

Blue hour spills across a narrow Oaxacan kitchen where a woman in a faded floral blouse wipes sweat from her brow while stirring a large aluminum pot on a gas burner. The air is thick with the steam of simmering mole, catching the dim light from a single bare bulb. Behind her, a weathered wooden shelf holds a row of chipped ceramic bowls and a brass grater, its teeth stained with turmeric. On the counter, a pile of ripe mangoes rests beside a torn paper bag of flour, their yellow skins against the dark, water-stained tile grout.
