Under the deep indigo spill of Istanbul’s blue hour, a corner bakery in Karaköy glows with the amber warmth of interior tungsten, revealing a shopkeeper in a faded apron leaning over a stainless steel counter. His hands are busy arranging small, translucent glass sugar jars next to a heavy ceramic coffee grinder, the items catching the reflection of the street outside. Through the slightly fogged window, the rough, cracked painted stucco of the facade contrasts with the smooth, polished metal of the equipment inside.
