Steam rises from a stack of stainless steel woks, catching the warm amber glow of hanging tungsten bulbs. A worker in a stained apron wipes down a counter cluttered with plastic condiment bottles and a canister set of spices, his movements quick and practiced. Beside him, a row of metal stools sits empty, reflecting the neon pink of a nearby mahjong parlor sign.
