Under the flat, shadowless glare of noon in a narrow Tokyo alley, a cramped ramen stall operates with frantic efficiency. A vendor in a white apron balances a stack of white ceramic bowls while a customer in a blue suit waits, holding a plastic bag of groceries. On the stainless steel counter, a set of stainless steel chopsticks rests beside a small, wet hand towel and a stack of paper coasters for drinks. Steam rises from a pot, softening the harsh midday light.
