Winter noon light cuts sharply across a narrow service alley in Chandni Chowk, illuminating a vendor’s makeshift workstation. A ceramic pitcher, chipped and stained with turmeric, sits beside a stack of steel tawa griddles, reflecting the harsh sky. Nearby, a coiled dustpan rests against a crate of artichokes, their purple leaves against the dusty red brick wall behind them. A worker in a faded wool sweater wipes steam from his face, his hand brushing past a knife-marked wooden cutting board scarred by years of rapid chopping.
