Fish Prep in Sydney

A damp concrete footpath in The Rocks district reflects the pale, diffuse light of a misty dawn, with the rough sandstone walls of heritage buildings rising on either side. A lone fish and chip shop has just opened, its roller shutter half-raised to reveal a stainless steel counter where steam rises from a deep fryer. On the counter, a battered metal colander holds fresh, glistening fish, their skins beaded with condensation from the cold morning air. Beside it, a plastic scrub brush rests near a sink filled with soapy water, evidence of the early morning prep.
