Flat noon light washes over a cramped fish and chip shop counter in Surry Hills, where the air hangs thick with steam and fried batter. A server in a stained white apron presses a greasy paper cone into a customer’s hand, the transaction hurried and practiced. Behind the glass display case, rows of golden chips glisten under harsh fluorescent tubes, while a stack of white ceramic tiles on the wall reflects the glare. A metal serving platter sits abandoned near the fryer, its surface marred by fingerprints and oil splatters. To the side, a plastic dish rack holds rinsed containers, dripping onto the linoleum floor.
