Under the mixed glow of sodium streetlamps and neon signage, a small bouchon in Lyon’s Vieux Lyon district is captured through a rain-streaked window. Inside, a server in a crisp white apron stands behind a narrow counter, carefully wiping down a surface that holds a single white ceramic cake stand and a stainless steel whisk, remnants of a recent dessert service. The warm interior light spills onto the wet cobblestones outside, reflecting off the pavement where a discarded paper doormat lies damp and curled.
