Preparing Service in Brussels

Flat noon light floods the narrow service corridor of a traditional Brussels café, illuminating a stack of well-worn cookbooks resting on a scarred wooden counter. Behind the books, a stainless steel steam haze rises softly from a saucepan, blurring the edge of a ceramic plate waiting for service. A pair of hands, dusted with flour, moves with practiced efficiency, adjusting a linen runner that drapes over the edge of the workspace. In the background, the curved brass of a stair rail catches the diffuse light, leading toward a pair of brooms leaning against the tiled wall, their bristles worn from daily use.
