Preparing Bread in Beirut

Mist rests on the limestone facades of a Beirut street, softening the sharp edges of weathered concrete and faded ochre paint. A small, family-run bakery sits open to the damp morning air, its interior glowing with the warm, yellow spill of incandescent bulbs. Inside, a baker in a flour-dusted apron uses a long wooden peel to retrieve flatbreads from a coal-fired oven, the heat haze distorting the air. On a nearby counter, a simple ceramic crock holds wooden spoons and metal utensils, their surfaces slick with condensation.
