Pho Stall in Ho Chi Minh City

by Ruth Charles

In the pre-dawn quiet of Ho Chi Minh City, a street vendor prepares breakfast at a small plastic table on a damp sidewalk. Steam rises from several white ceramic soup bowls filled with pho, the broth shimmering under the faint glow of a nearby streetlamp. Beside the bowls, a plate holds golden-brown baguettes, their crusts crisp and visible. The vendor, wearing a simple apron, slices the bread with a knife while arranging the bowls for the first customers. The scene is illuminated by the warm light of the stall, against the cool blue tones of the early morning air. Motorbikes are parked nearby, their headlights off, as the city begins to stir.
