Checking Timer in Sapporo
by Milo Foley
A cramped Sapporo ramen shop kitchen glows under harsh fluorescent tubes that clash with the cool blue spill from the street-facing window. Behind a scratched stainless steel counter, a chef in a damp white apron checks a digital kitchen timer, his breath visible in the cold air drifting from the open door. Outside, the wet asphalt reflects neon signs in streaks of red and white, while a black cat navigates the puddles near the entrance, pausing to watch the steam rise from a pot of broth. Pigeons huddle under the awning, indifferent to the chaos inside. A glass sugar jar sits near the register, its contents disturbed by a recent transaction.
