Under the flat, diffuse gray light of an overcast midday, a narrow alleyway in Beirut’s Achrafieh district hums with quiet industry. A vendor in a faded blue denim apron leans over a heavy stainless steel counter, his hands busy arranging small glass jars filled with vibrant red sumac and bright yellow turmeric.
