Preparing Gözleme in Izmir

A vendor in a narrow Karşıyaka alley adjusts a stack of chipped white ceramic plates on a metal cart, the morning sun casting long, sharp shadows across the damp cobblestones. His hands, dusted with flour, grip the rim of a heavy steel pot lid, preparing for the day’s first batch of gözleme. Behind him, a faded mural of a turquoise Aegean wave peels from the stucco wall, against the rusted hinges of a shuttered bakery door. A small, chipped tea kettle sits on a portable gas burner, steam rising in thin, translucent ribbons against the cool blue light.
