Passing Bakery in Fez in in Fez, Morocco

Passing Bakery in Fez

by Monique Vance

Mist clings low to the narrow, winding lane of the medina, softening the sharp geometry of the ochre plaster walls and the intricate zellige tilework framing a recessed doorway. A lone cyclist in a dark jacket navigates the wet cobblestones, his tires hissing faintly against the damp stone as he passes a small, family-run bakery just opening for the day. Steam rises from a large copper basin outside the shop, mingling with the cool morning air, while a baker, face obscured by a scarf, uses a wooden peel to slide flatbread into a traditional tannour oven.
