A cramped Seoul street food stall glows under the blue hour’s deep indigo wash, the air thick with steam rising from a bubbling pot of spicy stew. A vendor in a plastic apron works the counter, her hands moving quickly as she ladles broth into a small bowl. On the stainless steel prep table, a cluster of glass spice jars sits near a ceramic pepper mill, their contents catching the warm tungsten spill from the overhead bulb. Beside them, a woven basket holds fresh lemongrass stalks, their pale green skins glistening with condensation beads that reflect the neon pink sign above.
