A narrow alleyway in Tainan’s historic district opens onto a damp concrete courtyard where morning mist rests on the ground. An elderly vendor in a faded yellow raincoat leans over a stainless steel steamer, releasing plumes of white vapor that blur the background of peeling lime-wash walls. Beside the steamer, a chipped blue and white porcelain plate holds a single, glistening pork bun, steam curling around its pleated edge. The vendor’s hand, rough and stained with soy sauce, adjusts the lid of a nearby metal bucket while a coiled measuring tape hangs loosely from a wooden post, its yellow tape catching the diffuse gray light.
