Under the orange sodium glow of a Salvador streetlight, a street vendor’s cart stands open, revealing the steam rising from large aluminum pots of acarajé. The warm light catches the glistening oil on the fried dough balls, against the cool blue spill from a nearby convenience store sign. A customer waits patiently, holding a small paper plate, while the vendor’s hands move quickly, slicing into the spicy black-eyed pea fritters. Scattered around the cart are plastic cups and a worn wooden tray, worn smooth by years of service.
