A street food vendor stands behind a metal cart on a Cairo sidewalk under the deep night sky, the darkness broken only by the warm glow of overhead lights reflecting off metal surfaces. The vendor tends to a large, flat cooking pan where a spread of jeweled rice with a distinct saffron crust is being prepared, the golden grains steaming visibly above the handle of a long wooden spoon. The steam rises into the cool air, creating a soft haze that partially obscures the vendor's hands as they work.
