Under the mixed glow of sodium streetlights and neon signage, a small roadside eatery in Quito’s La Mariscal district hums with late-night activity. Through a grease-smudged window, a young woman in a faded yellow apron stirs a large pot on a gas burner, her face illuminated by the orange spill of the flame. Outside, the wet pavement reflects the chaotic colors of passing buses and distant Andean peaks shrouded in mist. A ginger cat sleeps curled on a stack of plastic crates near the entrance, oblivious to the passing traffic. The raw, vibrant energy of Quito after dark, where urban life and traditional cooking methods intersect seamlessly.
