Under the harsh, flat glare of a Ghanaian noon, a roadside food stall in Accra operates with focused efficiency. A vendor in a faded blue tunic lifts a steaming pot, releasing a cloud of steam that catches the light against the dark, polished stone counter. Scattered across the surface are remnants of preparation: fine white flour dust settling into the stone’s pores, a stack of folded plastic tables waiting for the next customer, and a few scattered recipe cards pinned to a wooden board.
