Morning light spills over the white-washed stucco of a corner bakery in Alexandria, catching the steam rising from a row of rectangular clay ovens. A baker in a flour-dusted apron uses a long wooden peel to slide trays of sesame-seeded ka’ak onto a cooling rack, the rough texture of the bread against the smooth, glazed ceramic tiles lining the interior wall. Through the open doorway, the dusty street outside is already waking, with a lone bicycle leaning against a pillar and the faint blue haze of the Mediterranean visible in the distance.
