Hot Pot in Sapporo

Through the frost-rimed window of a traditional Hokkaido izakaya, a cluster of patrons huddles around a low lacquered table, their breath visible in the chilled air. A woman in a thick wool sweater uses chopsticks to lift steaming tofu from a shared ceramic pot, her fingers protected by a knitted sleeve. Beside the dish, a small metal latch on a wooden cabinet catches the diffuse winter light, while a stack of folded newspaper rests near a glass of shochu. Outside, the gray snow blankets the narrow street, against the warm, amber glow spilling from the shop’s interior. The intimate warmth of communal dining against the harsh, quiet cold of a Sapporo noon.
