In the cool stillness before sunrise, a street vendor in Taipei adjusts a brushed steel rim on a portable gas stove, steam rising from a pot of boiling broth. A small jade plant bonsai with a thick sculptural trunk sits on the edge of the wooden cart, catching the faint blue light of the early morning. Nearby, a stack of clean teacups rests beside a pair of garden shears used for trimming herbs. The vendor wears a simple apron, focused on preparing a plate of bandeja paisa with beans and plantain for the first customers.
